Easy Vegan Baking Recipes

Here are all the recipes on Veganbaking.net that are easy to make.

Agave Maple Syrup

Agave Maple SyrupOne of the best parts of growing up was waking up to the aroma of Dad's legendary pancakes every Sunday. After gorging on them doused with maple syrup, the fam and I would go hiking on Mt Tam. Like clockwork, I'd eventually proceed to have an enormous mysterious energy crash that would reduce me into a quivering mess that Mom would call the shakes. I later found out this was because the maple syrup I loved so much was causing my blood sugar to peak, then crash due to its high glycemic index. Now I'm a lot more careful by making sure that I get some veggie sausages and go easy on the maple syrup. Agave syrup has a significantly lower glycemic index than maple syrup. Adding maple extract to it makes it a delicious maple syrup substitution, as shown in this recipe. Check out our article on sweeteners and glycemic index to see how different sweeteners stack up.

Banana Delight

Vegan Banana DelightOne wonderful summer in lovely Northern California, I had the pleasure of camping with one of my favorite people ever (who I'll just call Alf). That night he introduced me to something I'll never forget...Banana Delight! Serve with some quality sipping whiskey and good friends.

Basically Vegan Buttermilk Biscuits

Vegan Buttermilk Biscuits This Vegan Buttermilk Biscuit recipe makes great vegan dinner rolls that pair well with American feast-style dinners on holidays like Thanksgiving and Christmas. They feature just the right amount of tahini and lemon juice to accurately impart buttermilk flavors. These biscuits are also great served as a snack with a smear of margarine or almond butter. Serve them warm.

Celebration Vegan Pumpkin Pie

This Celebration Vegan Pumpkin Pie recipe features barley malt syrup to considerably push pumpkin flavors forward. Cinnamon, ginger, cloves and a touch of lemon juice are also effective flavor enhancers in this easy to make vegan pie. Flaky Pie Crust is recommended.

Cherry Candied Almonds

Vegan Cherry Candied AlmondsThis Cherry Candied Almond recipe is an excuse for me to combine two of my most favorite flavor combinations: cherries and almonds. I used brown sugar and olive oil for a more complex sweetness profile and just the right amount of almond extract to bind the cherry and almond flavor in holy matrimony. Try these as a relatively guilt-free vegan snack, add them to salads or sprinkle them on your ice cream.

Chewy Vegan Chocolate Chip Cookies

Chewy Vegan Chocolate Chip CookiesThese Chewy Vegan Chocolate Chip Cookies are no nonsense soft, chewy chocolate chip cookies like your vegan grandma used to make. Over the years I've learned a lot about the art of cookie making and these are simple to make but still pack lots of flavor into a chewy, chocolatey chippity package. The secret to this cookie recipe is having just the right ratio of fat, water and golden flax meal. The molasses also adds chewiness and the cinnamon adds a touch of flavor complexity. Finally, the way the cookies are formed results in just the right shape. These cookies are also great for ice cream sandwiches.

Chocolate Vegan Butter

Chocolate Vegan ButterOne of the benefits of Vegan Butter is that since you’re building it up from scratch, you can have full control of what you want it to be. It doesn’t have to go down the route of completely replicating traditional butter if you don’t want it to. Why would you want to replicate the texture of butter but not necessarily the flavor? Frostings and short doughs such as tart dough, pie crust and shortbread come to mind. You have much more variability in your end result if you can control flavor through your actual fat in addition to other ingredients. Imagine chocolate croissants where the butter is replaced with a fat that has the texture and flavor characteristics of both chocolate and butter. This is the reason I developed Chocolate Vegan Butter. Oh and you can spread it on toast too.

Chunky Apple Cranberry Sauce

This Chunky Apple Cranberry Sauce recipe features an eclectic mix of Granny Smith apples, red wine, ginger, a dash of curry powder, currants and a touch of orange zest to unify the tartness. This makes for a complex cranberry sauce that holds its own against Seitan or other savory protein-rich feast centerpieces.

Classic Vegan Cheesecake

Vegan CheesecakeThis is the classic vegan cheesecake recipe of dinner party legend. It relies on the amazing flavors of your favorite vegan cream cheese enhanced with a touch of non-dairy yogurt, non-dairy milk and just the right amount of flour for optimum flavor and texture. It's worth buying a spring form pan for.

Classic Vegan White Cake

This Classic Vegan White Cake recipe is a simple way to make delectable light and fluffy vegan cakes. It features a touch of apple cider vinegar for a superior crumb and flavor depth and just the right amount of vanilla extract and almond extract for a rich flavor. Its subtle vanilla notes won't compete for attention if you're interested in adapting it into more complex cakes.

Coconut Vegan Butter

Coconut Vegan Butter RecipeCoconut Vegan Butter is similar to Vegan Butter but involves unrefined coconut oil and agave syrup to accentuate the coconut flavors. The result is a spread that celebrates the richness and smoothness that only coconut can offer. Since this Vegan Butter is slightly more sweet than a regular vegan butter, it's recommended to add another layer of complexity to things like pancakes, toast or a baked item where coconut would enhance flavor. Also use this to make things like coconut pie crust or coconut lime scones.

Vegan Butter is designed to mimic real butter in vegan baking applications. Like real butter, Vegan Butter is more solid than tub margarine and not as spreadable. This is so it can perform optimally in vegan baking applications. If your goal is to have a conveniently softer, spreadable Vegan Butter, swap out 1 additional Tablespoon of the coconut oil with 1 Tablespoon canola, light olive oil or rice bran oil.

Cranberry Sauce

Vegan Cranberry Sauce RecipeThis Cranberry Sauce recipe is enhanced with a touch of orange juice and ginger. It's tart and sweet flavors contrast nicely with a slice of savory Stuffed Seitan.

Creamy Vegan Cashew Cheesecake

Vegan Creamy Cashew CheesecakeThis Creamy Vegan Cashew Cheesecake recipe is a natural take on a vegan cheesecake that doesn't use space age ingredients like cheesecakes using store bought vegan cream cheeses often do. I tried to strike a good balance between unprocessed ingredients and high quality flavor. This cheesecake uses a cashew base enhanced with apple cider vinegar, lemon juice and just the right amount of sugar and vanilla extract to tie it all together.

Creamy Vegan Cashew Cream Cheese

Vegan Creamy Cashew Cream CheeseDon't get me wrong, I love vegan cream cheese alternatives from companies like Tofutti. It's just that I've been wanting to have an option for something that's a little more natural. Creamy Vegan Cashew Cream Cheese doesn't taste like cream cheese as much as some of the space age alternatives but it's close enough for me. Keep in mind that if you forego using the xanthan or guar gum in this recipe it won't be as creamy. It's use is recommended- we're trying to emulate lactose here so we need all the help we can get.

Creamy Vegan Cashew Cream Cheese Frosting

Vegan Creamy Cashew Cream Cheese FrostingThis Creamy Vegan Cashew Cream Cheese Frosting recipe is a great way to get that cream cheese flavor without resorting to lab derived ingredients like xenophobo-lactate. This vegan frosting features cashews and is enhanced with just the right amount of apple cider vinegar, lemon juice, sugar and vanilla extract. The mixture is then given a rest to allow complex flavors to develop more fully. It takes longer to make due to this step but it's worth it.

Creamy Vegan White Frosting

This delicious Creamy Vegan White Frosting recipe is great for flavored layer cakes where you want the frosting to compliment the cake, not compete with it. This vegan frosting also goes great with a white cake if you want to keep things simple yet elegant.

Cultured European Style Vegan Butter

Cultured European Style Vegan ButterThe more I learn about pastry, the more I realize that European pastry is on a completely different level compared to classic American pastry. My impression is that European pastry is all about introducing flavor depth through manipulating eggs, butter and technique. Croissants, strudel and danish pastries come to mind. American pastry, on the other hand, tends to build off bold flavors with a strong sugar backbone accentuated by spices. Apple pie, cupcakes and cookies come to mind here.

In the quest to become an adept baker, it’s important to draw from as many influences as possible. One trick that many American style bakers use to improve flavor depth is taking a cue from European bakers by using cultured European style butter.

How does American style butter differ from European style butter? Let’s take a look.

Easy Vegan Caramel Sauce

Easy Vegan Caramel SauceUse this Easy Vegan Caramel Sauce recipe to bring another dimension to vegan cheesecakes, ice creams, pies, brownies or pretty much anything. Caramel is one of those rare taste miracles that's in the same realm of chocolate sauce and maple syrup; it would probably make cardboard taste delectable. It's liquid gold. This is an easy to make sauce that utilizes coconut cream for rich flavor. Coconut contains flavor compounds called lactones which are among the same compounds that give dairy products like cream their signature flavors. Want to turn up the flavor level to eleven? Replace the vanilla extract with 1 Tablespoon bourbon, rum or brandy.
