Vegan Pecan Bonbons Recipe
2 cups pecans (soaked for 12 hours and drained)
1 cup pitted medjool dates
1 teaspoon cinnamon
¼ cup almond butter
½ cup shredded coconut
1) Blend the pecans dates, cinnamon and almond butter
Blend the pecans in a food processor until finely chopped. Add the dates, cinnamon and almond butter. Process until a ball of dough is formed.
2) Roll the mixture into balls
Form into small balls and roll in the shredded coconut.
Keep chilled. This recipe makes about 8 Vegan Pecan Bonbons.
