Summer Vegan Baking Recipes
Here are all the recipes on Veganbaking.net that are perfect for Summer!
Strawberry and rhubarb are joined together in holy matrimony with orange zest and a touch of sugar in these Vegan Strawberry Rhubarb Pancakes. I opted to not make these pancakes too sweet because I like real maple syrup or a liberal topping of strawberries to drive the sweetness. If you like your pancakes sweet you may want to consider adding a couple Tablespoons more sugar. Or top them with sweetened vanilla yogurt for a new take on strawberry shortcake. I repeat: you can con your friends into enjoying something really close to strawberry shortcake for breakfast! Either way it’ll be a breakfast to remember.
Vegan Vanilla Ice Cream
Few desserts are as satisfyingly simple as Vegan Vanilla Ice Cream. Over the years I've had dozens of different styles and I’ve developed a preference for what I believe to be optimal qualities in ice cream. I believe it should be rich, smooth, delicately melt into a creamy base in your mouth but not linger for too long and not have off flavors. I don’t prefer ice creams that are frozen into a block of ice, nor do I approve of ice creams that have the texture and taste of ice milk. So how do you develop a soft, creamy, flavorful vegan vanilla ice cream recipe without using eggs or dairy? While we're on the subject of ice cream, how do you develop an assertive vanilla flavor while not being over-the-top and making it taste artificial?
Vegan Hazelnut Coffee Ice Cream
This Vegan Hazelnut Coffee Ice Cream recipe takes advantage of hazelnuts, also known as filberts for its base and to enhance coffee flavors. Early trials of this vegan ice cream used toasted hazelnuts which brought out slightly deeper hazelnut flavors but left minuscule granules in the ice cream which affected creaminess. If you have a VitaMix, go ahead and toast them. If you have a regular blender leave the hazelnuts untoasted so creaminess isn't affected. The ice cream will be delightful either way, especially when topped with Vegan Double Chocolate Sauce.
Vegan Coconut Rum Raisin Ice Cream
This Vegan Coconut Rum Raisin Ice Cream recipe is a great example of how suitable coconut milk can be as a rich, creamy base in vegan ice creams. The coconut flavor is further enhanced by the addition of toasted shredded coconut then complimented by just the right amount of rum soaked raisins. It's important to note that adding more than 2 Tablespoons of rum is discouraged because it will drastically increase the freezing temperature resulting in ice cream that's too soft.
Vegan Double Chocolate Brownie Chunk Ice Cream
This Vegan Double Chocolate Brownie Chunk Ice Cream recipe was going to be called Triple Chocolate Brownie Chunk Ice Cream due to it's use of two different types of chocolate and brownie chunks mixed in. Then I realized that things were starting to get out of hand and I had to look out the window and count to ten. Its still full of chocolate though; This Category 1 chocoholic wouldn't lie. It's a great way to use up those extra Ultimate Vegan Brownies you have lying around that you've desperately been trying to eat. Wishful thinking, no? Drizzling some Double Chocolate Sauce over the top is highly recommended.
Vegan Plum Cake - Pflaumenkuchen
This Vegan Plum Cake recipe is based on a traditional Pflaumenkuchen, or German plum cake. I broke with tradition a little and enhanced the plums with a splash of rum and a dusting of sugar and cinnamon. I wanted the intense fruit flavors to be well balanced by a flavorful cake so I used the power of yeasted cake to add flavor depth in the cake department. Yeasted cake also has the benefit of utilizing gluten bonds for binding which frees us from needing to use any fancy egg replacers. I purposely designed this cake to be on the dense side because I felt that it helped to showcase the plums. The result is a fruit forward plum topping baked into a cake that can hold it's own. Black plums are preferred due to their high level of sweetness. Feel free to make this cake using any combination of other stone fruits you may have on hand.
Vegan Strawberry Rhubarb Pie
Strawberry and rhubarb's sweet and tart flavors are married with a hint of orange zest in this Vegan Strawberry Rhubarb Pie recipe. Strawberry and rhubarb together in a flaky pie crust is probably the most effective way to ring in the spring and summer months via flavor alone. Both of these fruits let go of lots of water during baking which can make things on the soupy side. A generous amount of arrowroot flour and a longer baking time at a slightly lower temperature than usual solves this issue and gives the pie a chance to bake to its juicy perfection. It's like a summer vacation in your mouth.
Vegan Strawberry Pop Tarts
Pop tarts are one of the easiest ways to pair fruit with flaky pastry goodness. This Vegan Strawberry Pop Tart recipe can be customized with whatever fruit preserves you have on hand. You can also fill them with things like chocolate; maple sugar and cinnamon; bananas and coconut, the possibilities are endless! Heck, you can even fill them with savory stuff like caramelized onions, mushrooms and potatoes. I won't judge. Just be sure to keep the filling under 2 teaspoons so they don't push out the sides during baking. The pastry is based on Flaky Pie Crust and features just the right ratio of Vegan Butter or margarine to shortening for the flakiest, most flavorful crust around.
Vegan Blueberry Frozen Soy Yogurt
This Vegan Blueberry Frozen Soy Yogurt recipe is super simple to make. It's just unsweetened vegan soy yogurt mixed in an ice cream maker with the fruit jam of your choice. I happened to have blueberry jam when I made this batch. Be sure to use quality soy yogurt. There are some brands out there that don't taste anything remotely like yogurt and they are to be avoided. It's also recommended using quality jam made with sugar instead of high-fructose corn syrup. Be sure to use unsweetened soy yogurt or else your frozen soy yogurt will come out too sweet. This recipe is already on the sweet side so the fruit comes through with intensity.
Vegan Sweet Potato Pecan Ice Cream
When this Vegan Sweet Potato Pecan Ice Cream recipe is mentioned to passerby one of two things usually happens: people either express great joy or wince and convulse. Sweet potatoes are pumpkin 2.0 people! They have a much more complex flavor than pumpkin so I just cut to the chase and paired them with candied pecans to make this vegan ice cream. You could substitute pumpkin purée if you really wanted to but it's not recommended unless you're stuck on a dessert island with nary a single sweet potato in sight.
Vegan Bourbon Baked Apples
This Vegan Bourbon Baked Apple recipe is a great way to get that ridiculously good apple flavor without resorting to the time intensive sport of pie making. It's kind of like an apple pie but without all the crust drama. The core of the apple is removed and replaced with a delectable mixture of pecans or walnuts, raisins, maple syrup, cinnamon and nutmeg. The whole deal is then doused with bourbon and baked to perfection. I won't tell if you drink some of the bourbon to make sure it's okay.
Vegan Nectarine Peach Plum Cobbler
Vegan Blueberry Beetnik Muffins or Bread
This Vegan Blueberry Beetnik Muffin recipe takes advantage of baked beets which harbor wonderful butter caramel flavors when their sugars caramelize. The vegan muffins are then complimented by the tartness of blueberries and just the right ratio of whole wheat flour and all-purpose flour. Lemon juice enhances flavor while allowing the beet purée to retain its vibrant reddish color during baking. This is because acids reduce the oxidation of plant-based compounds called anthocyanins, which are responsible for the red color in foods like beets and raspberries.
Poached Pears in Red Wine
Vegan Peach Pear Cobbler
Vegan Blueberry Buckwheat Pancakes
This Vegan Blueberry Buckwheat Pancake recipe features blueberries and buckwheat flour which lends them a tart sweetness along with an earthy, nutty richness. You also have the choice of adding either oat bran, wheat bran or wheat germ. These vegan pancakes are delightful topped with a touch of almond butter, additional fruit and/or real maple syrup.
Fresh Lemon Sorbet
Vegan Blueberry Muffins or Bread
These Vegan Blueberry Muffins feature a buttery flavor and smooth texture thanks to the combined efforts of non-dairy milk, lemon juice and lemon extract. This compliments the tartness of the blueberries, making a delectable snack for breakfast or any other occasion. The combination of lemon juice and lemon extract in this recipe is so the lemon flavor can be brought up to tasty levels without excessive acidity, which in large amounts can negatively affect gluten's ability to bind.
Vegan American Apple Pie
Studies have shown that vegan apple pie transfers flavors to the taste buds faster than the speed of sound. Ok, maybe not but you would think so right? This vegan Apple Pie recipe calls for tart green apples such as Granny Smith for prominent apple flavor. Apple notes are further enhanced with ingredients such as Vegan Butter, molasses, calvados or brandy, cinnamon, nutmeg and a touch of allspice. Flaky Vegan Pie Crust is recommended.
Vegan Tropical Paradise Bars | Gluten-free
This Vegan Tropical Paradise Bar recipe makes perfect vegan energy bars for sporting events, a nutritious snack for people on the go or just for dessert. These gluten-free bars feature a cashew butter base that's sweetened with agave syrup, brown rice syrup then studded with pineapple chunks, macadamia nuts and shredded coconut.
