Vegan Chocolate Coconut Madness Bars

This Vegan Chocolate Coconut Magic Bar recipe is quite possibly the only good thing I got from going to church as a youngster. Sundays were free-for-all sugar fests that kept the kids coming. This vegan dessert in particular often inspired me to secretly infiltrate the church kitchen with ninja-like abilities so I could get to it first while the church service was still in session.

Magic Bars are also known as Seven Layer Bars because they often involve seven alternating layers of things like walnuts, chocolate chips, peanut butter chips, butterscotch chips and shredded coconut that are bonded together with a liberal drizzling of condensed non-dairy milk. I opted to forego the peanut butter chips and butterscotch chips due to their near-impossible vegan availability and because they usually push the sweetness envelope a little too far. I then made up for their lack of flavors by opting for Golden Vegan Caramel Sauce or Easy Vegan Caramel Sauce instead of Vegan Condensed Non-dairy Milk in the binding department. The result is a sticky gooey mess of a great thing.

Vegan Chocolate Coconut Magic Bar Recipe

1 cup Golden Vegan Caramel SauceEasy Vegan Caramel Sauce or  Vegan Condensed Non-dairy Milk.

9 graham crackers
5 Tablespoons unrefined coconut oil, melted
1 Tablespoon + 1 teaspoon water
1/8 teaspoon salt

1 ¼ cup walnuts
1 ¼ cup chocolate chips
½ cup shredded coconut

1) Prepare your baking dish

Preheat the oven to 325F (163C). Line an 8 x 8 inch baking dish with parchment paper and set aside.

2) Prepare the vegan caramel sauce

Prepare the Vegan Caramel Sauce or Vegan Condensed Non-dairy Milk.

3) Prepare the graham cracker crust

Break the graham crackers into 1 inch pieces, place in a food processor and pulse repeatedly until they're ground into a sand-like consistency. Add the crumbs to a large mixing bowl, add the melted coconut, water, salt and hand mix with a spoon until well combined. 

4) Press the graham cracker crust into the baking dish

Transfer the graham cracker crumb mixture to the baking dish and distribute evenly on the bottom. Use the bottom of a pint glass to press the graham cracker crumb mixture into the bottom of the dish so it's firmly packed.

5) Sprinkle the layers of the ingredients, drizzle with topping and bake to perfection

Add a layer of the chopped walnuts to the baking dish and distribute evenly. Repeat with the chocolate chips, then the coconut. Carefully drizzle the caramel sauce or condensed non-dairy milk evenly over the top. Use a rubber spatula to distribute it if you need to spread it out a little. Bake for 35 minutes. Allow to cool completely before slicing into squares. Store in an air tight container at room temperature for up to one week.

I think this recipe would have been a HIT (the graham cracker crust was so delicious when I tasted it - and the vegan caramel sauce) - but I found the baking time to be way too long. I checked on them at the halfway point - and it seemed to be doing fine; therefore, I trusted the instructions and went for the whole time. WAY TOO LONG. Probably could have baked for 17 minutes at that temperature.

Baking time too long

Thanks for the feedback on these bars coachcaitlin! The baking time is longer due to the lower baking temperature of 325F. I'll look into seeing if reducing the baking time could benefit this recipe and if it does, I'll update the recipe to reflect it. Thanks again for your honest feedback!

These were a major hit with my non-vegan friends. They are almost too good! I improvised by using ginger snaps instead of graham crackers. The result was good--the bottoms turned out a bit crunchier and the cookies added a gingery kick.

I was thrilled to find this recipe, because I loved 'Magic Cookie Bars'.I was wondering where do you get your graham crackers? All the brands of graham crackers I've seen have honey and whey in them.

OMG YUM!!

OMG! I made these for my vegan friend this morning and we ate them for our afterlunch dessert...let me just say, Holy YUM!!! These are seriously the best things EVER...better then my traditional, non vegan counterpart!! Thank you so so so so so much for this recipe!! I LOVE them!

This should be illegal ...

... 'cause it's too good !
Mine didn't really turn out that great because I had to use a very large cooking pan and the chocolate kind of melted around the edges, but it still looked so good we couldn't even wait for it to cool.

I'm thrilled this worked out for you Cha, even though you had the cooking pan issues. I just updated the recipe to give the option of using Easy Caramel Sauce or Condensed Soy Milk so people have the option to save a little more time in preparation.

EPIC desert!

I made these for my LOST season finale party since there were a couple vegans coming over- and they were awesome! Everyone loved them! We ate the whole pan...

One recommendation would be to use some heat on the condensed milk - I had the stove on low and it took forever... then I realized I could get it to a boil.

Also, I recommend freezing them for a bit to get them to harden.

Overall- a super easy and tasty treat! Thanks Mattie!
