Vegan Cookie Recipes

I have a question...

I have not tried any of the recipe's because I only found this page today. I am wondering if these Short bread cookies can be baked in a ball with a chocolate covered Almond (for example) inside & not flattened? For those who can indulge in chocolate etc...any help would be great. Thanks

I have been trying to make banana bread/muffins using yeast for quite some time now; however, my recipe has always been a fail. The bread rises but falls back down in the pan. "Made this last night. I'm always looking for a good, healthy yet tasty vegan carrot cake. And I should preface this by saying there's nothing on this page claiming to be healthy - so my other vegan friends might like it better. The cake batter is very dense and thanks to the heavy spicing, is tasty, but way too sweet for me. Would like to try it again using 1/2 - 2/3 the various sugars in this and maybe swap out the pineapple for bananas for more fluffiness? The frosting was so heavy with shortening that the mouth feel was just disgusting. And it only barely covered 1/2 the cake at 1/4". I even added another 1/4 cup of sugar, splash more of the flavorings and almond milk, but still nasty. I created a second batch that used..."

"Hello. I made coconut oil based butter and tried to make buttercream with it. It was good til I splashed soy milk for thinner consistency - it went sour. I mixed it longer and nothing happened. Tried to put more sugar but its too sweet and the same - thin consistency and soured. Any suggestion whats wrong there? Thank you! P.s. I suspect it was vinegar and soy milk reaction but butter consists of it. Maybe because of more soy milk?"

"I am so happy I stumbled upon this recipe yesterday. We were having company over (non-vegans), and I really wanted to find a brownie recipe for dessert that would impress. I've been vegan for nearly 13 years, and this is the best recipe I've tried! Usually my brownies end up cakey or crumbly but these were truly brownies as brownies are meant to be. A couple of changes I made: I didn't have espresso powder, so I replaced the water in the recipe with a shot of espresso. And rather than try to melt the chocolate by pouring hot liquid over it, I simply melted it in the microwave on a low heat setting.
