I want to make one of the granola recipes posted, but it calls for wheat germ and oat germ. I don't have those. Can I replace it with something I do have, like ground flax?

Hi prettyleodia!

The wheat and oat germ don't provide a considerable amount of structure or flavor to the granola recipe so you should be able to add oats that have been briefly pulsed in a food processor or blender. You may be able to use ground flax but it might cause an issue.

When flax seeds are exposed to moisture, they activate a mucilage which is a goopy substance that the seed uses for food when it germinates. This mucilage likes to hold onto moisture for a considerably long time which could result in gummy granola even after baking. I recommend playing it safe and using the pulsed oats or even flaked rye or rice bran if you can find it.
