I ended up using the bread flour and it turned out great! I was a little worried at first because the dough seemed really sticky, but it turned out perfectly. Thanks!
Glad it worked out StephanieGC! The dough is really wet and sticky by design. The wetness helps it bake up crispy on the outside and chewy on the inside. I just made this last night too on a pizza stone for the first time and it worked out great.
