The uneven road leading to this crust has made past girlfriends almost dump me over failed pizza prospects. I've lost many highly anticipated meals and wasted lots of time. Yes, the lowly pizza crust depends on some fundamental ingredients and methods that are to be mastered in order to bake itself to crispy perfection.

Nine Grain Whole Wheat BreadThis Vegan Nine Grain Whole Wheat Bread recipe is unique in that it sports nine grains and contains 100% whole wheat flour for the rest of the ingredients which adds a superb flavor and texture not found in many other breads. Baking a bread with both of these features involves a little more effort but I think you'll agree that it's time well spent. This bread differs from a regular bread recipe in two ways: First, the grains are soaked so they soften and integrate into the loaf. Second, since we're using 100% whole wheat flour for the rest of the flour we need to soak it overnight so the bran softens. This softened bran will enable a more efficient rise because the bran won't cut gluten strands. It will also allow for a more supple crumb. These soaked flour and grains are technically referred to as, what else? A soaker. I suspect the bread baker who coined this term was having a creativity block the day he named this method.

How to Make a Bunny CakeMy favorite part about Easter growing up was when my Mom made the Bunny Cake. This cake is in the shape of a bunny head with a bow tie. That's right. Cake in the shape of a bunny head. it's impossible to not get excited when seeing this cake. Usually a white or carrot cake is slathered in white or cream cheese frosting then a coconut fur covers part or all of the cake. Mom usually used red licorice for whiskers and jelly beans to outline the bow tie. She also colored the inside of the ears with shredded coconut that was dyed pink which gave the bunny an extra cute persona. She didn't bake very often back then so the Bunny Cake was a very special occasion for me and the rest of the family; more important than Easter itself to me on a subconscious level. She would bring out the colorful cartoonish cake that would lay on a bed of coconut which would conceal the crusty old non-stick cookie sheet underneath perfectly. I would always have the ear first in order to get the maximum amount of frosting before the rest of the family.

These types of fats work wonders for cakes, cookies, bars and breads. When designing recipes where we need something to act like butter, things start to get complicated. Solid fats like butter and margarine are integral to things like puff pastry, pie crust, shortbread, croissants, danish dough and certain cakes. This is because in these cases the fat is used to coat the flour so gluten doesn't develop too much and also trap air bubbles to enhance leavening and texture. The only option in these instances is to turn to a margarine or similar vegan butter that is solid at room temperature and gets soft as it melts so it blends to one cohesive mass of dough.

This cupcake is a throwback to everyone's favorite childhood (or adult!) combination of bananas topped with chocolate and peanut butter. And while there may be several steps, there are several substitutions along the way that make it easy to adapt for the cook on the go!
