Here's a Tip!

When gliadin and glutenin proteins join together with the aid of moisture they form gluten. The more gluten in your flour, the more water required to hydrate these proteins into gluten. This is why bread flour requires more water than cake flour.

French Vanilla Ice Cream



This ice cream is a worthy companion for any fall dessert like apple pie, pecan pie or cake. It's packed with the flavor of two vanilla beans which sets it apart from other vanilla ice creams. It's also a perfect base recipe for any ice cream- just forego adding one of the vanilla beans and customize this recipe with chocolate chunks, fruit, chopped cookies, caramel or anything else you have in mind. You have the choice of going soy free or nut free as well.

3 cups Cashew Cream or Soy Cream

2 vanilla beans

¾ cup sugar
2 Tablespoons arrowroot flour or tapioca flour
½ teaspoon turmeric powder
1 pinch salt

Prepare your Cashew Cream or Soy Cream.

Straighten out your vanilla beans and cut each one in half by running the tip of a sharp knife along each one lengthwise. Open each vanilla bean half with your hands so the vanilla bean paste is exposed. Now scrape out the vanilla paste by running your knife blade perpendicular down the open half of the vanilla bean. Set the vanilla bean paste aside and discard the outer halves.

In a medium saucepan over medium heat, add the Cashew Cream or Soy Cream, sugar, arrowroot flour or tapioca flour, turmeric, vanilla bean paste and salt. Bring the mixture to a simmer then remove from heat while whisking constantly. Whisk the mixture for an additional 5 minutes to make sure the sugar is completely dissolved. Transfer to a covered container and place in the refrigerator to cool for about two hours.

Now we need to whip some air into the ice cream so it's creamy. Beat the mixture with a mixer for about 5 minutes.

Mix in an ice cream maker for about 30 minutes.

Transfer to a covered container and put it in the freezer for 3 hours. Enjoy.
Makes about 1 Quart.

Make Your Own Vanilla Extract
In these trying times purchasing baking ingredients to sustain your sweet tooth/hobby can add up. Many of us have more time than funds these days so it can be fun to discover the art producing things we take for granted. This is the heart of what DIY culture is all about. It's fascinating to create, learn and save some dough in the process.

Lately I took that approach to vanilla extract and was able to create a vanilla extract that was comparable to high end extract for slightly more than half the cost.

To do this first you'll need to obtain a proper vessel. The little 5 oz. bottles that hot sauce comes in is perfect for home brewed vanilla extract. Transfer the hot sauce to a small pyrex container and thoroughly wash the glass bottle a couple times to wash away all the hot sauce remnants.

Go Max Go Candy Bars
When was the last time you had a really good candy bar? I mean to the point of where it rivaled an artisan chocolate? When I heard about these my initial thoughts were that it was great someone had finally started making candy bars without all the space age ingredients and animal by products- but they would still probably taste just like the candy bars they were trying to duplicate. I would then be back to square one. Wasn't one of the hidden benefits of veganism being that you didn't have to worry about accidentally eating two snickers bars at one sitting? Boy was I wrong about that assumption.
