Here's a Tip!

When gliadin and glutenin proteins join together with the aid of moisture they form gluten. The more gluten in your flour, the more water required to hydrate these proteins into gluten. This is why bread flour requires more water than cake flour.

Thanksgiving Dessert Recipe Roundup Print E-mail
Bites From Around The Web
Most of you will probably agree that Thanksgiving is one of the best days of the year because it celebrates friends and food. What could possibly be better than making the best possible food and being surrounded by your favorite people? Making sure that food is dessert! And at Veganbaking.net that's how we roll.

This year we recommend Chunky Apple Cranberry Sauce for a saucy sidekick to your meal. For desserts try some Sweet Potato Pie, Pecan Pie or Pumpkin Bourbon Bread Pudding accompanied by either French Vanilla Ice Cream or Chai Chocolate Chip Ice Cream. Don't want all the heft but still want to get your sweet tooth on? Check out these Chocolate Orange Sweeties or keep it on the natural side with some Chocolate Covered Date Truffles. Your friends won't know it's dates inside and they'ill think it's some sort of complex truffle filling you spent all day on. Need to relax after all that goodness? Kick back next to the fire (or heater) with some Ginger Liqueur or Mulled Wine and be thankful that you have a full belly. Happy Thanksgiving everyone!

Blueberry Slump with Vegan Coffee Ice Cream by Tasty Snack Treats Print E-mail
Bites From Around The Web
My parents were cleaning out the freezer last weekend and found a bunch of wild Maine blueberries that we had forgotten were in there.  When I say a bunch I mean it too, there must be 15 quart bags of berries.  I figured I better get baking quick!  So first off I made my grandmother’s Blueberry Slump.

Tiramisu, Frangipan, Gingerbread Pancakes with Orange Sauce and Parchment Paper Tricks Print E-mail
Bites From Around The Web
We've been meaning to start experimenting with Tiramisu and Joanna Papa from Pittsburg Center for Complimentary Health and Healing Blog seems to have it down pat. It's a little involved but come on, it's Tiramisu! Musings from the Fish Bowl decided to enter The Daring Baker's Challenge and ended up making an amazing looking Frangipan. We want to move to France and take her French classes in hopes that she'll bring some of these types of eats to 'test' out on us. Tomorrow's brunch will hopefully be these amazing Gingerbread Pancakes with Orange Sauce from The Blooming Platter. These spicy puppies include brown rice syrup, instant coffee and mustard powder for a ginger assisted morning wake up call. Baking Bites has a how-to on lining a cake pan with parchment paper. Now our cakes will actually come out of our pans. Nice!

Breakfast Bars, Sweet Potato Waffles, Peach Tart and Focaccia Print E-mail
Bites From Around The Web
We've been in a little breakfast rut lately and Elana's Pantry is about to solve that with her Breakfast Bars. They're gluten-free and have almond flour, grapeseed oil, agave nectar and coconut among other goodies. Nourishing breakfast foods that are like desserts are a double whammy of goodness. Mission: Vegan whipped up some Sweet Potato Waffles that we are just dying for. In a vegetable deathmatch, sweet potato would probably kick pumpkin's ass. Can you imagine how good these would be topped with some Earth Balance and agave maple syrup? C'est La Vegan made a gorgeous Peach Tart. The peaches and nectarines aren't in need of much spices to bring out their flavors in this tart, which has a somewhat shortbread-esque crust. Rounding out the savory side, Veritable Vegan details their Rosemary and Garlic Focaccia which looks as simple as it is scrumptious.

Apricot Upside Down Cake, a Winning Frosting and The History of Cookies Print E-mail
Bites From Around The Web
Today we found some interesting stuff around the webosphere including Your Vegan Mom's Apricot Upside Down Cake. We could really use some cake right about now. Hannah Kaminsky at Bittersweet Blog had some issues recreating the famous frosting from the BabyCakes Cookbook so she came up with her own variation. We're into the proliferation of good frosting options so bring it on. What's Cooking America has a great article on the History of Cookies dating back to the seventh century AD. The article also has an Animal Crackers poem. Seriously.

Bites From Around The Web: Banana Split Cupcakes, Piping Gel and Rhubarb Cake Print E-mail
Bites From Around The Web
This is a new segment of Veganbaking.net where we highlight things around the web that we think are cool and share them with you.

I would do just about anything for these 3-Layer Banana Split Cupcakes from Oh She Glows. Banans, strawberries and chocolate definitely have us interested. Becca Bartleson for the Portland Examiner has a great article on Baking With Coconut Milk. I think that it could be really useful for adding an extra dimension to certain baked eats. I really liked this recipe for Piping Gel from Cakes and More Blog. It looks really easy and adaptable for using natural food colorings. The stuff I buy in the tubes at the baking supply store are pretty artificial looking and I'd love to just start making it myself. I've been wanting to eat more cake lately and really want to try this Rhubarb Cake with Sweet Rhubarb Compote from Rhymes With Vegan.

Moo-Cluck Chocolate Chip Cookie Dough
Many people these days have difficulty finding time to make their own food due to busy schedules. Homemade food tends to taste significantly better than store bought food because store bought food usually sits on the shelf losing it's freshness for days or weeks. By the time it gets to your mouth it's sometimes gotten a little bit stale. Food manufacturers often compensate for this by adding ingredients to improve freshness which also can have the side effect of changing the taste or mouthfeel of the food slightly.
In attempt to create the taste of a homemade cookies without the hassle of making them from scratch, Moo-Cluck offers Chocolate Chip Cookie Dough for your hungry hearts. Read on for our complete review.
