Here's a Tip!
When gliadin and glutenin proteins join together with the aid of moisture they form gluten. The more gluten in your flour, the more water required to hydrate these proteins into gluten. This is why bread flour requires more water than cake flour.

To achieve flaky baked items like pie crusts, it's all about how you mix the fat into the flour. the best crusts are baked with saturated fats which are solid at room temperature such as margarine or coconut oil. The fats are mixed into the flour so the mixture resembles gravel. In order to achieve this mixture, the fat pieces are about the size of peas. This allows the fat and water based ingredients to be layered in a grain-like structure when the dough is rolled. During baking, heat causes the water to expand into steam resulting in a flaky crust. A pastry blender is an essential tool for how you achieve this optimum mix of margarine to flour.

If you're into baking things like candy, fruit-based foods like preserves and brownies, (or you live outside of the US where they rightfully ditch the volumetric measuring system) you'll find that there's really nothing like a kitchen scale to measure your food as accurately as possible by weight, known as 'scaling'. In fact, measuring solids by volume is a bad habit that our non-American friends never really got into. It all started when Fannie Farmer introduced a cookbook in 1896 called The Boston-Cooking School Cookbook that introduced the method of measuring evertything by standardized measuring spoons and cups. This was a huge improvement at a time when recipes called for "a sufficient amount of salt" and "a teacup of water".

This sour elixir is made by fermenting apple juice so the sugars turn into alcohol. The cider then undergoes a second fermentation where the alcohol is converted to acetic acid. Acetic acid is what gives vinegar it's sour taste. In vegan baking applications, vinegar is often used for it's leavening and flavor enhancing properties.

This ensures that your ingredients don't become too hot too fast or too much, which can cause them to break down. Other times you might want to work with something like melted chocolate for an extended period of time and not worry about constantly adjusting the heat to ensure that it's evenly melted. This is where a double boiler comes to the rescue. It's like cruise control for your heat!
A double boiler is a specific piece of cookware consisting of two fitted pots. The bottom pot is filled with 1 to 3 inches of water and the top pot fits above it and holds the ingredient that you're heating.
