I was running low on sugar, so a few teaspoons of sugar, and a fourth and an eight cup of honey did the trick!
I just made this cake. I had a similar problem to someone who had written before me, that was that had I put in the whole liquid part, it would've been just soup. So I used a bit less coffe. But it just was not great for me. It doesn't taste bad but I'm just not loving it.
We've been on a really tight budget. Really very little in the cupboards! I needed to find a cake recipe with no soy milk, fancy egg subs, veg butter, shortening etc XD Not easy! This fit the bill! I didn't have cocoa either! I subbed 2oz vegan dark chocolate (grated into the dry mix). This worked out just peachy. Most cakes Ive made with the baking soda/vin combo come out soggy in the center. This one did not! It's a lovely, moist, fluffy chocolate cake :) With chewy chocolatey corners no less! Thanks for sharing!
I made this cake this in the form of cupcakes and used my own frosting. The cake had a very nice texture and was moist. While I would rank it well above the box mixes I used once upon a time, it was missing something in the flavor department. I used water and not coffee, so maybe that would have given it the extra something-something I was looking for. Thanks for the recipe, I will be trying it again with the coffee next time.
