Love this frosting. I used it without the added shredded coconut for the tropical carrot cake in Vegan with a Vengeance. Mine was still pretty gloppy and wouldn't pipe well, but I'm betting more time in the refrigerator would have fixed that.

Great on a tropical carrot cake

Love this frosting. I used it without the added shredded coconut for the tropical carrot cake in Vegan with a Vengeance. Mine was still pretty gloppy and wouldn't pipe well, but I'm betting more time in the refrigerator would have fixed that.

Hi scodiana,

Yes, the coconut oil in this frosting makes it extremely sensitive to heat so it's best to take it out of the refrigerator and give it a whisk at 15 minute intervals until it's stiff enough to use. Thanks for sharing and glad it worked out!
