Vegan Banana Delight

One wonderful summer in lovely Northern California, I had the pleasure of camping with one of my favorite people ever (who I'll just call Alf). That night he introduced me to something I'll never forget...Banana Delight! Serve with some quality sipping whiskey and good friends.

4 Bananas (duh!)
1/2 cup Semisweet chocolate chips (vegan)
1/3 cup Shredded coconut (unsweetened)
1/3 cup Walnuts

Tin Foil

Whiskey (for sipping by the campfire)

Add the chocolate chips, shredded coconut and the walnuts to a jar and mix them by shaking the jar.

Unpeel said banana.  Put banana on a good sized square of tinfoil.  With a sharp knife, cut the top of the banana off in a horizontal 'V' shape so that you create a boat like receptacle for the goodies to rest in.  Put the cut out portion of banana to the side for now If possible, do not cut all the way through the banana. If you do, no worries, it'll just get messy!  Shake the previously mixed shredded coconut, chocolate chips and walnuts into the cut out portion of the banana.  Place the banana top back on top of the banana so the mixture is 'sandwiched'.

Wrap the sucker well in tinfoil Place on hot coals in the campfire for 5 to 10 minutes.  It's difficult to tell when the bananas are done but after a couple you'll get the idea.  The goal is to get the Banana Delght hot enough so that the sugars in the banana slightly caramelize, the walnuts get toasted and the chocolate melts.

Remove from the campfire and give them a minute to cool.  Unwrap the tinfoil, grab a spoon, take a shot of whiskey and eat up!

Bee-Dee Memories

Awe, banana delight brings back a lot of good memories with my friends....ahem

I plan on making this on a volunteer camping trip to Cebello Canyon. I just experimented and made some in my oven b/c I can't wait to eat them. I think I over cooked them b/c they came out a little watery.

Listen up, this is the perfect camping treat. Very inexpensive even with quality items.

All that's missing is that WHISKEY, hum-that-tune, and my San Francisco friends.

Tasty!

I used to make these at girl scout camp when I was younger! Yum! What a great idea for a recipe, gooey banana, chocolate, walnuts, and coconut. What could be better?

YUM!!!

Absolutely amazing! I wasn't camping while making these, so no fire, but I made some and enjoyed it raw... Too bad I couldn't cook them, but I loved them anyway! Also, I didn't have any walnuts so I went without :[

Thanks for an awesome recipe!!! When my family goes camping this summer, I am totally going to make these the right way!

These are hella good!

Let me tell ya, these are bomb. Super easy to make even after you've been sipping on the camping whiskey for a little too long. It's all about caramelized bananas, toasted walnuts, coconut and melted chocolate.
