Exquisite Vegan Gravy

Even though a lot of instant gravy granules are vegan friendly, I decided to have a go at making my own. It's really tasty and you don't need to be vegan to enjoy this recipe! The quantities can be amended to suit personal tastes and needs. And you can add other ingredients for variety, ie chopped mushrooms, herbs, horseradish for a bit of bite, chilli for some heat; the possibilities are endless.

1 clove garlic
½ onion
dash of red wine
about ½ pint vegetable stock
½ teaspoon marmite
1 to 2 Tablespoons gravy browning or cornflour
black pepper to taste

Finely chop the onion and garlic.

Fry the onion and garlic until soft.

Add the red wine to the hot pan and reduce to a syrup like consistency.

Add the vegetable stock and Marmite.

Mix the gravy browning or cornflour with a little cold water. Using corn flour will not affect the flavour at all. Gravy browning is simply cornflour with colouring added, so it means you wont get that dark, rich colour but it will still taste lovely! Add the cornflour mix a little at a time, stirring constantly until it reaches the desired thickness. Remember you can add more if you want it thicker or more water if it's too thick! Lastly add black pepper to taste.
 
Remember to keep tasting the gravy as you go. Vegetable stock can be quite salty so you may want to start adding water instead.
