Vegan Chocolate CakeOk so I found this Vegan Chocolate Cake recipe and it was a HUGE hit with my family and friends. It was quite easy to make as well! I've never really been a cake person, in fact I detest the stuff for the most part; but this cake made even me nod in approval. The blend of coffee that I put in the recipe adds to the chocolaty goodness and taste. It's very moist as well. There is a glaze that goes with the cake, but I personally never use it. I think the cake is just fine alone. However, I will add the directions for the glaze in case you guys want to try it.... Enjoy!

Vegan Vanilla Almond Crescent CookiesThese Vegan Vanilla and Almond Crescents are an incredibly delicious biscuit with just the right amount of sweetness and lots of rich flavours from the almonds and vanilla. My choice of coconut oil for this (and most of my cooking) is the more refined kind, which is refined by filtering it through clay to remove the coconut taste and smell. This gives a ‘buttery’ flavour and texture to the baked good with all the goodness of coconut oil, but without being overwhelmed by coconut flavours.

Vegan Banana Walnut Granola
I've designed this Vegan Banana Walnut Granola recipe to be considerably under-sweet so it can be relied upon for a nourishing breakfast that will deliver sustained energy. If you prefer your granola more on the sweet side, increase the sugar by 2 to 4 Tablespoons.

As the granola is toasted, the heat brings out the full potential of rich banana-enhancing notes from the cashew butter, banana chips and walnuts. As bananas ripen, their starches convert to fructose which makes them sweeter and more suitable for baking. In fact, whenevery you plan on baking with banana I advise you to always use over-ripe bananas. I usually transfer these over-ripe bananas to a plastic freezer bag and store them in the freezer. When I have enough saved up I use them in things like Banana BreadBanana Walnut Pancakes and this granola.

Vegan ShorteningAs I progress in my vegan baking adventures I strive for quality ingredients that give me as much control as possible over the flavors and textures I'm trying to convey. I also love breaking foods down to their most basic components and building them back up again, learning and getting unnecessarily excited along the way. For some people it's TV. For me it's this sort of food hacking. 

I recently decided that I wanted to create a high quality vegan butter because I began to tire of the store bought yellow goop that I was so steadily relying on. What if I don't want all that diacetyl flavoring, beta carotene coloring, palm oil and who knows what else? My vegan butter experimentation ended up being more successful than I imagined. What if I made my own shortening?

Sugar Mama's Gluten-Free Vanilla CakeLet me just say, I'm a vanilla girl. Don't get me wrong, chocolate is great! But when I had to give up gluten & dairy I really just missed good old vanilla cupcakes. I tried a lot of recipes but they were too dry or too grainy or too plain or too... well, gross. So I got to work! It took me awhile to perfect but I'm SO proud of this Gluten-free Vegan Vanilla Cake recipe and I really think you'll love it. Vegan Vanilla Cupcakes - Quick Bread MethodThis Vegan Vanilla Cupcake recipe makes light and airy vegan cupcakes that have a soft, tender crumb due to the addition of arrowroot flour as well as apple cider vinegar. Vanilla extract and a touch of almond extract tie it all together. These cupcakes utilize the quick bread method which involves mixing your dry ingredients and wet ingredients in separate bowls, then mixing them both together at the end. This is a really easy way to make great cakes that have tender and spongy qualities. The drawback of this style is you have to be careful if you adjust the amount of sugar; more sugar will tenderize the batter, negatively affecting rise. These cupcakes are a little under sweet for my taste but if you're going for an elaborate frosting job no one will notice. If you increase the sugar in this quick bread method by even 1 Tablespoon, the cupcakes won't rise enough so it's not recommended. Use these cupcakes as a base for other flavor variations by switching out some of the flour and/or flavoring extracts. You can make multiple batches and freeze the rest for later use. Home made pie crust has that irresistible flakiness and gives you the satisfaction of knowing that you made the whole pie. This Flaky Vegan Pie Crust recipe can be used for any pastry such as Vegan Pop Tarts, turnovers, English pasties or anything else you'd like to envelop in tender, flaky goodness.

In a pie crust the goal is tenderness and flakiness. This is achieved by a high level of fat and a low level of water. The fats serve two purposes: The Vegan Butter in this recipe breaks into small pieces, coating the flour and inhibiting gluten from forming. The shortening is cut into larger pieces so it doesn't break down as much when it's cut into the flour. This is so the shortening forms thin layers as the dough is rolled. These thin layers catch evaporating water as the crust bakes which causes the crust to form thin, flaky layers similar to what's found in puff pastry.

In this Vegan Coconut Macaroon recipe I chose to showcase coconut with just a touch of brown rice syrup and vanilla extract so the coconut does most of the talking. Coconut is perfectly happy if you are in the paring mood however. If you're feeling so inclined, a drizzle of melted chocolate will bring these to the next level.
