Vegan Ren-oaty Granola Cookies

I decided to recreate a granola cookie I once had in Sonoma from a cute little coffee shop. It was this fantastic oat-based cookie with honey and nuts and seeds. It was filling and tasty, but not vegan. So I thought I would try it at home with my modifications. I'm very, very pleased with how they came out. Please try this recipe at home.

Servings: 24

½ cup margarine
½ c brown sugar
¼ c brown rice syrup
1 teaspoon vanilla

2 ½ cups old fashioned oats
1 teaspoon salt
1 Tablespoon sesame seeds
1 Tablespoon pumpkin seeds
1 Tablespoon sunflower seeds
¼ cup cranberries
1 Tablespoon shredded coconut (unsweetened)

1 Tablespoon ground chia (or 
flax) plus 3 Tablespoons water

Preheat oven to 375F. In a large bowl cream margarine and sugar together, add brown rice syrup and vanilla until mixed well. Add oats and salt. Fold in sesame seeds, pumpkin seeds, sunflower seeds,  cranberries and coconut. Mix well. Finally add the "chia egg" by mixing 1 Tablespoon ground chia (or flax) with 3 Tablespoons water. Add to the mixture and stir completely.

Spoon mixture into well greased or non-stick mini-cupcake tins. Bake for 25 minutes or until golden brown. Remove from oven and let cool completely or they may tear apart easily. Ahhhh...delicious...

I've been looking for a good granola bar/cookie recipe for a long time and this one is good. Made it today and it tastes great. But I found the cooking time of 25 minutes way too long. They would have been burnt to a crisp by then. I'm wondering if the temperature was supposed to be 275 instead of 375 F as most granola recipes are cooked at a lower temperature. Also in your photo it looks like you've included almonds, but they are not listed in the ingredients. I love almonds and would like to include them. Do my eyes deceive me, or did you include almonds in yours? Thanks very much.

Hiya - you know, I'm pretty sure those are pumpkin seeds and not almonds...but I love almonds too! If you add them let me know, I'm sure it'd be fantastic!

As for the temp, my oven is a bit wonky... I'll make them again soon and let you know...
