This beauty in this Pecan Bonbon recipe is it's simple preparation that brings complex flavors. These vegan bonbons utilize raw, unprocessed ingredients like dates, cinnamon, almond butter and coconut. It's a simple, fruit sweetened treat.

2 cups pecans (soaked for 12 hours and drained)

1 cup pitted medjool dates
1 teaspoon cinnamon
¼ cup almond butter

½ cup shredded coconut

1)
Blend the pecans in a food processor until finely chopped. Add the dates, cinnamon and almond butter.  Process until a ball of dough is formed. 

2)
Form into small balls and roll in the shredded coconut.
Keep chilled.
