I am making a slow transition from vegetarian to vegan and recipes like this will make the transition that much easier. Made these with my boyfriend - rolled the truffles in toasted unsweetened coconut, plain unsweetened coconut, toasted walnuts, pistachio crumbles, and mixed raw unsweetened cocoa with sweetened coca (sifted). They are almost too pretty to eat!

I recommend blending the dates and nuts in small-ish quantities at a time.
They taste amazing from the freezer!

So here I am again checking the recipe just before i make another bunch.
Note: I do not like the balls covered in cocoa, its better to cover them in coconut or the nuts

These are delicious! They're very easy to make, but perhaps a little messy. For those who are unafraid of the mess, you'll get a delicious treat. I bought a little bit too much of the shredded coconut, so I rolled the truffles in that before popping them into the freezer.

Side note: for those of you who have never touched dates (like me) make sure you get the pits out before you throw them into the blender. xD

Hi Mattie. I was wondering what I could use instead of the 4 oz. unsweetened baker's chocolate, 100% cacao, since where I live, in India, it isn't available. All you get here thats vegan is chocolate compound, and honestly, I have no idea what the heck that is!! :0)

How long will these keep? My wedding is in two weeks and I want to make a huge batch to put in thank you bags for my guests but I'd like to make them the weekend before. Would they keep for a week in the refrigerator?
