They also make excellent cupcakes with a dollop of shipped coconut cream on top!

These muffins were quite good, I think I tried the revamped version of the recipe but I did substitute melted coconut oil for 1/2 the olive oil in the recipe (for texture's sake) and they turned out light and fluffy and yummy. Next time I would probably add a bit of ginger/nutmeg/cinnamon but the vanilla works well.

Great texture. I never would have though to mix beets and blueberries. The combination piqued my interest so I had to try it! The beets are a strong unique flavor, and the color of the loaf was absolutely gorgeous.

My husband and I really enjoyed this (made it as bread) with some blueberry preserves. (:

With a bit of maple cream on top, it couldn't be better. Thanks for the recipe!

Blueberry Muffins or Bread: My go-to blueberry bread recipe!

I first tried this recipe about a month ago when we were having friends over for dinner. I wanted to make something for dessert and we had some blueberries in the fridge that needed to be used up.
This bread was a HUGE hit. Everyone kept going back for more and before we knew it, we had finished off the entire loaf. I have a fresh loaf baking in the oven right now and I can't tell you how excited I am to have a slice with my coffee.

I threw some figs in with the dates and blended the liquids in my NutriBullet - I gotta admit that mixture alone was so good, I might just make that for a dessert. :-)
