To shave chocolate you can either melt dark chocolate down and wait for it to solidify and then shave with a spoon. Or if in a hurry you can shave the squares with a butter knife.

Pumpkin Cupcakes with Spiced Icing: Modified to be healthier

I changed these to make them healthier.

3/4 cup coconut sugar (which has a low-glycemic index. Not a perfect sugar replacement because of the sucrose, but better than refined sugar for sure.
http://authoritynutrition.com/coconut-sugar/)

Coconut oil is controversial so I decided to go with canola oil.
1/4 cup applesauce instead of blackstrip molasses to make it less sugar heavy.
I used egg replacer instead of chia seed just because I was out, works great.
I used whole- wheat pastry flour instead of all purpose white.
I used ground cardamom instead of ginger, because I was out.

Instead of frosting I used shaved dark chocolate as a garnish.

I had a little bit more batter than was needed, but it made a great left-over giant cookie.

Husband approved, and he is used to very traditional baking.

I've been asked to make gluten free and vegan (in the same batch!) cupcakes for my sister in law's wedding; never tried it before! I was so excited to find your blog posting with this recipe. I haven't tasted them yet, but they smell like heaven! Thanks so much for your help. Nicole

Vanilla Cupcakes - Cream Method: Question

As I will be using this for a cake size portion, I notice that you use 11/2 tsp of flax seed instead of a Tsp. (I'm so used to whole "eggs" in my recipes). Would it make a difference if I used an "egg" measurement (1Tsp. flax to 3Tsp. of water) in the recipe?

Also, can I replace apple cider vinegar for white vinegar?

Vanilla Cupcakes - Quick Bread Method: a few more notes

I forgot to mention (see previous review) that I doubled this recipe and got 12 cupcakes + one 7-inch cake. If you want a bigger cake, i'd just do 2.5 recipes or so. For the cupcakes I filled the liners 2/3 full, not half, and in my oven they were perfect at 19 minutes. The cake took 11 extra minutes. I removed the cupcakes and left the cake in and everything turned out fine. Another excellent variation is to add 1/3 cup unsweetened dark cocoa powder (plus the white or regular chocolate chips). Absolutely delicious.

Vanilla Cupcakes - Quick Bread Method: fantastic best vegan cupcakes ever!

I made these cupcakes (and used the same recipe to make a layer cake) for my daughter's bday party and got RAVE REVIEWS from people who had no idea they were vegan!!! If for any reason you are not 100% satisfied with the recipe posted, try my version and I think you'll see why I got rave reviews: for non-dairy milk I used 1/2 c. coconut milk and 1/4 cup+2T of rice milk. Since coconut milk is pretty fatty, I cut down the oil in the recipe by just a tad: I used 2T of olive oil and 2T of sunflower seed oil (didn't have any canola oil) (for a total of 1/4 cup oil). I used just 1 1/2 t of vanilla as the 2 t version seemed too strong for me. I also used 1/8 t rum extract in place of almond extract (didn't have any). I do not agree at all that these are not sweet enough. They are absolutely perfect and as a matter of fact, when using coconut and rice milk the sweetness increases, therefore I even cut out one of the T of sugar. I added white chocolate chips in the end, and decorated with lightly sweetened stabilized whipped cream. DELICIOUS. Nobody believed me that these did not contain butter or eggs. As a matter of fact, I tried a regular cupcake recipe and didn't like it nearly as well as this one, so I went with this one. Fantastic. ENJOY!!! And thank you Mattie!

Pumpkin Cupcakes with Spiced Icing: Restaurant Approved!

I brought these in to the restaurant where I work as a taste test for Thanksgiving. My coworkers and bosses loved them and couldn't believe there was no egg!

Please note- my five star rating applies only to the actual cake as I was too lazy to make the frosting.
Also note- I used pumpkin puree from a fresh pumpkin that I roasted and pureed myself. (Rather than the canned stuff.)

And do NOT skip the walnuts. They are SO GOOD in this!!

Pumpkin Cupcakes with Spiced Icing: So tasty

These were so delicious. I loved them. My family loved them. My friends loved them. HUGE success. I'm the only one who is a vegan, and no one could even tell the difference between these and non-vegan cupcakes. I even added a little more spices than in the recipes, especially more cinnamon (I LOVE cinnamon). I definitely recommend a little more spice in the frosting to cut the sweetness of the powdered sugar since you need so much of it. I'm so happy I made these though, and I definitely recommend them!
