(I'm so used to whole "eggs" in my recipes). Would it make a difference if I used an "egg" measurement (1Tsp. flax to 3Tsp. of water) in the recipe?

Also, can I replace apple cider vinegar for white vinegar?				]]></description>

If you want a bigger cake, i'd just do 2.5 recipes or so. For the cupcakes I filled the liners 2/3 full, not half, and in my oven they were perfect at 19 minutes. The cake took 11 extra minutes. I removed the cupcakes and left the cake in and everything turned out fine. Another excellent variation is to add 1/3 cup unsweetened dark cocoa powder (plus the white or regular chocolate chips). Absolutely delicious.				]]></description>

If for any reason you are not 100% satisfied with the recipe posted, try my version and I think you'll see why I got rave reviews: for non-dairy milk I used 1/2 c. coconut milk and 1/4 cup+2T of rice milk. Since coconut milk is pretty fatty, I cut down the oil in the recipe by just a tad: I used 2T of olive oil and 2T of sunflower seed oil (didn't have any canola oil) (for a total of 1/4 cup oil). I used just 1 1/2 t of vanilla as the 2 t version seemed too strong for me. I also used 1/8 t rum extract in place of almond extract (didn't have any). I do not agree at all that these are not sweet enough. They are absolutely perfect and as a matter of fact, when using coconut and rice milk the sweetness increases, therefore I even cut out one of the T of sugar. I added white chocolate chips in the end, and decorated with lightly sweetened stabilized whipped cream. DELICIOUS. Nobody believed me that these did not contain butter or eggs. As a matter of fact, I tried a regular cupcake recipe and didn't like it nearly as well as this one, so I went with this one. Fantastic. ENJOY!!! And thank you Mattie!				]]></description>

My coworkers and bosses loved them and couldn't believe there was no egg! 

Please note- my five star rating applies only to the actual cake as I was too lazy to make the frosting.
Also note- I used pumpkin puree from a fresh pumpkin that I roasted and pureed myself. (Rather than the canned stuff.)

And do NOT skip the walnuts. They are SO GOOD in this!!				]]></description>

My family loved them. My friends loved them. HUGE success. I'm the only one who is a vegan, and no one could even tell the difference between these and non-vegan cupcakes. I even added a little more spices than in the recipes, especially more cinnamon (I LOVE cinnamon). I definitely recommend a little more spice in the frosting to cut the sweetness of the powdered sugar since you need so much of it. I'm so happy I made these though, and I definitely recommend them! 				]]></description>

My only criticism was that the cake was a bit heavy and not as light and fluffy as what you would normally expect.

For the icing, I used 1 cup of powdered sugar. It probably could have used a bit more to thicken it up but it was perfect for my tastes; not overly sweet.

I'll definitely make these again!				]]></description>

I still make these often to the delight of the vegan boyfriend whom this recipe helped me win over. ;) Do you think that the recipe would still work if I added the zest of a lemon and replaced a couple tablespoons of the milk from the flax mixture with lemon juice? I see this recipe as enormously versatile, but I would definitely prefer to discuss subs of this acidic caliber with another science minded individual. 				]]></description>
