Thank you just found your blog and am loving it already!

I've made this to fill some gluten free pastry cases and make chocolate tarts. They are really tasty and I'm very impressed. However, I'm wondering if the ganache needs to be kept refrigerated? I may try and sell some on a market stall and was wondering if it would be alright at room temperature for the day?

Dark Velvet Ganache: Chocolate brand?

I have tried making vegan ganache several times and both times it has come out grainy and did not mix together properly, am I doing something wrong or is it perhaps the brand of chocolate I am using. I am thinking it is because I have only managed to get my hands on Ghiradelli chocolate chips so far. Any suggestions on brands to try or look for?

Rich Buttercream Frosting: you've done it again, Mattie

Nice job yet again, Mattie!! My ladypal just baked me some cupcakes last night using this icing. She is a vegan baking novice and pulled it off without a hitch (nor a candy thermometer)!

Though great, I found this recipe to be a bit sweet for my tastes. I am wondering what you might recommend if I wanted to cut down on sugar? Not sure it would still be structurally sound if I reduced the sugar or not. I've tried cooked (vegan) buttercreams made with tapioca or corn starch before but they always turned out like watery slop (though I may have overcooked the starch...who knows). Anyway, any advice is much appreciated!

Thank you so much and keep up the good work!!!!

I had to beat the family away from just eating it straight out of the bowl or I wouldn't have had any to put on the divine carrot cake. It was sweet and soft and easy to make.

Creamy White Frosting: Yum!

Wow, this is yummy! I made it with coconut oil in place of shortening, and doubled the vanilla since I wanted the vanilla flavor to be noticeable. I melted the coconut oil first to make sure there wouldn't be clumps, and I was worried it wasn't going to come together, but as it mixed, it re-solidified (as I had hoped) and the consistency ended up perfect. Not sure if it would work to do that in warmer weather--it might need to be refrigerated before the final mixing.
To me it tastes like real buttercream. I couldn't stop licking the bowl, which is saying something since I usually don't care much for frosting in general.

Vanilla Icing: Vegan icing that doesn't turn runny!

Just tried this icing for some strawberry cupcakes and it is delish. I have had a really hard time finding a vegan icing that doesn't get all runny and oozy--this is the one! I had so much fun piping it on that I ended up playing tic-tac-toe on my cupcakes. Super easy too! I used the modified 1/4 amount version posted in a review above and it was perfect. I will be trying it with butter instead of coconut oil next time as another user did (I like coconut flavor but have to be in the right mood for it). Thanks for sharing this great recipe!

This glaze was exactly what I was looking for. I halved the recipe, as I only needed a little bit and was able to frost 32 small snowflake shaped cookies. I had plenty left over that I just threw out. The consistency was smooth and creamy, just runny enough. Be sure to cover with plastic wrap if not using right away as it will dry out quickly.
