I would never guess they are vegan if I hadnt made them myself. I used 1/2 cup of earth balance soy free in the tub. I cant find the stick kind over here. They came out nice and crunchy not soft at all. Although i usually like them a bit softer, I think I'll cook them a little less next time. The flavor is outstanding though. I used coconut milk and then I made icing with coconut milk and it really came out wonderful! these came out better tasting then cookies I made before I was vegan! thank you for this recipe!!				]]></description>

Half our guests are vegan or have allergy issues so this year we made this dough! EVERYONE loved it. They tasted better and baked better than the traditional dough that was also used!

I used gluten free flour, rice milk and soy free Earth Balance. The cookies were too soft to make into shapes, but I rolled them into balls and they turned out perfectly!!! I plan to whirl it up a bit in my blender first, to make it powdery. Also, does it matter if I have golden or regular flax meal?				]]></description>

The vegan margarine we have in the UK (brand names Pure and Vitalite) come in tubs and can be spread on bread straight from the fridge, so I don't know if they would be too soft to use and cause a whole lot of spreading.				]]></description>

				<title><![CDATA[Sugar Cookies: Comparable to old fashioned Shortbread Cookies]]></title>

I am slowly replacing my age-old traditional recipes with vegan versions.  These cookies turned out very nicely.  I personally felt it was closer to a shortbread cookie, rather than a sugar cookie,
I used two Earth Balance buttery sticks in place of the the one cup margarine.  I didn't have any golden flax meal, so I used Almond Meal Flour.  Sticking with that theme, I used unsweetened Almond Milk for my 3 Tbsp of non-dairy.  All of this blended well with the 1/2 tsp of almond extract.  I cut the salt down to 1/2 tsp, and topped them off with a mixture of cinnamon and sugar.
I will definitely make these again.  I look forward to sharing them, over the holidays, with my omnivore friends and family. 				]]></description>

Only small problem was that they were a tad dry, but it really wasn't a big deal.  Could've been something I did..
