This Creamy Cashew Cheesecake recipe is a natural take on a vegan cheesecake that doesn't use space age ingredients like cheesecakes using store bought vegan cream cheeses often do. I tried to strike a good balance between unprocessed ingredients and high quality flavor. This cheesecake uses a cashew base enhanced with apple cider vinegar, lemon juice and just the right amount of sugar and vanilla extract to tie it all together.

Don't get me wrong, I love vegan cream cheese alternatives from companies like Tofutti. It's just that I've been wanting to have an option for something that's a little more natural. Creamy Cashew Cream Cheese doesn't taste like cream cheese as much as some of the space age alternatives but it's close enough for me. Keep in mind that if you forego using the xanthan or guar gum in this recipe it won't be as creamy. It's use is recommended- we're trying to emulate lactose here so we need all the help we can get.

These vegan cookies feature a touch of molasses, barley malt, ginger and just the right amount of nutmeg and cinnamon for deep gingerbread flavor. This recipe also works for fabricating gingerbread houses.

I used to own a vegan baking company called Enchanted Oven Baking Co. This Peanut Butter Chocolate Cookie was one of the cookies I sold, individually packaged, to health food stores around the San Francisco Bay Area around 2003-2005. Here it is in all it's glory. This recipe has been modified from a 200 cookie batch so please excuse the wonky measurements.Brown rice syrup, cinnamon, vanilla and just the right amount of chocolate chips really brings out the best in these dense, chewy peanut butter cookies.

Most people won't be able to guess that these Chocolate Covered Date Bonbons are just chocolate covered dates if you don't tell them. One thing that they will know is that they're amazing. You can tell them that you spent 13 hours making the filling in this vegan bonbon recipe and just leave it at that.

This seductive Double Chocolate Sauce is perfect drizzled on ice cream, cake or pretty much anything else. It's chocolate sauce. What could it possibly not be good on? This vegan chocolate sauce recipe uses the tried and true formula of semi-sweet chocolate, cocoa powder and espresso powder to bring out the most complex chocolate flavor possible.
