My boyfriend and I have been eating too much sugar lately, so I thought I'd give a sugar-free recipe a try. These blueberry corn muffins are great! I used fresh blueberries, and lots of them.
My roommate thought they were a little bland, but it's nothing a little jam or agave won't fix. I thought they were great the way there were. The batch didn't last more than a day. Next time I would double the recipe, since it only makes a dozen, and there's no way I could have just one...

These were great! I loved the filling. Although a long process, the process itself was relatively easy.
I made some with raisins and some without (no nuts--allergies!) but preferred the plain ones (with icing, of course).
I would definitely make them again.
