				<title><![CDATA[French Toast: Couple of additions...]]></title>

Out of almond milk so used soy.  Once the first side was in the pan, lightly sprayed the tops with cooking spray so they browned up nicely when this side was turned over.  I used a fresh loaf of French bread but next time will let the bread air and get crispy before cutting.  Ended up putting in the oven to 'crispen' the outside.  

To add a bit of pizzazz, I made a cashew cream (cashews soaked overnight and then food process using a small amount of the water to make it very smooth) added maple syrup to it and used it on top - it was like having stuffed French toast with cream cheese - next time I probably will just go ahead and stuff it prior to cooking.  This really added a nice touch. 				]]></description>

If you make this expecting french toast, you'll be disappointed. As a breakfast treat, it's fairly tasty and I would make it again. It's extremely simple too.

The bread slices definitely need to be thick, but if you cut it too thick you mainly taste bread. My advice: do what the author says and make sure you only cut it one inch thick.

Also, the peach mixture doesn't really brown in the pan. It's still good, it just didn't get that nice golden, crunchy texture I was hoping for. It's still tasty and simple so go ahead, give it a go!				]]></description>

You really have to use a loaf of bread not the sliced kind. I like foods that are very crunchy so I placed the bread in my mini toaster oven after cooking it until golden on the frying pan. It gave it that extra crispness. I love this breakfast. 				]]></description>
