I only recently discovered baking paper as for years I thought it was what we Brits call greaseproof paper. Now I know it's not and well, what a revelation! These days I automatically cut sheets of baking paper for my trays and I certainly never trust recipes that tell me to use ungreased trays because I've had problems with cookies sticking even on non-stick trays.

All that hassle (and washing-up) is now over, all thanks to baking paper. My cookies slide off effortlessly, the paper goes in the bin and the trays go back in the drawers, job done.

I'd not considered attaching clips to keep the paper held down, but it's a good idea. To be honest, I just scrunch the paper up a bit to keep it from rolling up and that's OK for me.
