These Chewy Chocolate Chip Cookies are no nonsense soft, chewy chocolate chip cookies like your vegan grandma used to make. Over the years I've learned a lot about the art of cookie making and these are simple to make but still pack lots of flavor into a chewy, chocolatey chippity package. The secret to this cookie recipe is having just the right ratio of fat, water and golden flax meal. The molasses also adds chewiness and the cinnamon adds a touch of flavor complexity. Finally, the way the cookies are formed results in just the right shape. These cookies are also great for ice cream sandwiches.

When the weather starts to cool and gets a little drizzly (as Seattle is known to do) I start craving warm and hardy soups. Thick, earthy and when you get up from the table, you don’t even care that it’s already dark. Most of the vegan barley soups I’ve found seem to be too brothy and not enough of a bold flavor for me. My family is newly vegan so we still need that “meaty” flavor. So what do I do when I need a bolder flavor? I booze it up. Yep. That’s the bam around my house. “Booze it up!” I know, what a wonderful role model I am! I also like to add kale. Mostly for color but also because it is super nutritious and I am always trying to toss it into my dishes.
This vegan Golden Corn Bread Recipe takes advantage of nutritional yeast flakes and a touch of maple syrup which gives it a rich, buttery flavor while corn kernels enhance its hearty texture. It's a Northern style corn bread so it features a mixture of corn flour and all-purpose flour. It's baked in a square baking pan instead of a cast iron skillet and it's designed to be a little sweeter and more moist than it's Southern counterpart.
These power puffs are so puff-tastic! I highly recommend them. I have never used millet before and I will certainly be using it more often. It’s fluffy, light and has more protein than puffed rice. These little power puffs are a perfect snack with a hot cuppa joe. You can easily cut this recipe in half if you aren’t trying to feed an army. These are so good that my husband brought them to his Tai Chi class this morning and vanished with a request for more next week…I highly suggest you give these a whirl.
