I was excited to see this post and it sounded sooo yummy! (I was doubly excited to see that this person is from my neck of the woods as finally someone can relate the the cold drippy goodness of the NW). I had never cooked with wine before and it sounded marvelous! Overall I think this is a great start to a soup: Great textures! Crunchy celery, meaty mushrooms, chewy barley. However, I will be going back to add lots of spice. The thyme, salt and pepper were a good start but in order not to get bored of soup by November, I like to make them distinct, which this soup has the potential to be. I'll be going down to Market Spice for sure today and adding a little jazz to this hearty beauty. Advice: Make it! Then make it your own by adding all your personal faves or the untried spices lingering in your cabinet.
