Crunchy on the outside just like the old-style egg type French toast. Smothered in Earth Balance and maple syrup, it was a perfect start to our day. Out of almond milk so used soy.  Once the first side was in the pan, lightly sprayed the tops with cooking spray so they browned up nicely when this side was turned over.  I used a fresh loaf of French bread but next time will let the bread air and get crispy before cutting.  Ended up putting in the oven to 'crispen' the outside.  

To add a bit of pizzazz, I made a cashew cream (cashews soaked overnight and then food process using a small amount of the water to make it very smooth) added maple syrup to it and used it on top - it was like having stuffed French toast with cream cheese - next time I probably will just go ahead and stuff it prior to cooking.  This really added a nice touch. 				]]></description>
