Vegan Chocolate Cake

Ok so I found this Vegan Chocolate Cake recipe online and it was a HUGE hit with my family and friends. It was quite easy to make as well! I've never really been a cake person, in fact I detest the stuff for the most part; but this cake made even me nod in approval. The blend of coffee that I put in the recipe adds to the chocolaty goodness and taste. It's very moist as well. There is a glaze that goes with the cake, but I personally never use it. I think the cake is just fine alone. However, I will add the directions for the glaze in case you guys want to try it.... Enjoy!
 
Cake
1 ¼ cup flour 
1 cup sugar 
⅓ cup cocoa powder 
1 teaspoon baking soda 
½ teaspoon salt 
1 cup warm water (you may substitute this for coffee) 
1 teaspoon vanilla extract 
⅓ cup vegetable oil 
1 teaspoon white or apple cider vinegar 
 
Glaze
½ cup sugar 
4 Tablespoons margarine or vegan butter substitute 
2 Tablespoons soy milk 
2 Tablespoons cocoa powder 
2 teaspoons vanilla extract 

1)
For the Cake
Preheat oven to 350F (177C). In an 8 x 8 inch square pan, mix the flour, sugar, cocoa powder, baking soda and salt with a fork. Add the water or coffee, vanilla extract, vegetable oil and vinegar. Mix the ingredients together. Bake for 30 minutes. Cool on a cooling rack.

For the Glaze
In a small saucepan bring the ugar, margarine, soy milk and cocoa powder to a boil, stirring frequently. Simmer for 2 minutes, remove from heat and stir an additional 5 minutes. Stir in the vanilla extract. 

3)
Pour the glaze onto cake and let it cool for one hour.

i love this cake, would have given it 5 stars, but it totally sticks to my non-stick pan and comes out a mess. What are you doing that I'm not :(

Good but stuck to pan

i love this cake, would have given it 5 stars, but it totally sticks to my non-stick pan and comes out a mess. What are you doing that I'm not :(

I love this recipe because I had everything in my cupboard to try this. We love how tasty it is & I had a hard time not eating the glaze by itself! Thank you for this recipe, I will be baking this for a loooooong time.

Amazing and Easy To Make!

I love this recipe because I had everything in my cupboard to try this. Lucy, we do have baking soda here - it's bicarbonate of soda, sodium bicarbonate.

The vinegar and bicarb are being used in this recipe instead of baking powder, so I would expect the flour to be plain flour (that's how I make cakes like these, anyway). You could use baking powder, but leave out the vinegar.

Based in the UK and looking for a birthday cake for my daughter who is vegan through allergies. I'm very new to vegan baking so this website is fab. Best chocolate cake... EVER!

I am new to the vegan lifestyle, but a complete chocoholic! And this is by far the best chocolate cake I have ever had! I loved it! I did substitute the oil with apple sauce though, and only used 1 teaspoon of vanilla extract in the frosting. It was a huge hit with the family, and will most definitely be making it again!

this is Wacky Cake!

I've been make this cake for well over a decade. I found it first on a CD of recipes that came with a computer oh so long ago. It was called Wacky Chocolate Cake! It is hands down the BEST recipe out there for ANY, vegan or not, chocolate cake! I recently made it for my daughters 1st birthday and covered it in vegan marshmallow fondant. Everyone loved it!

This cake is wonderful! I made it with wholemeal flour and rapadura sugar, so it was even healthy. Would not change a thing - you would never know it it is vegan, and what's more you wouldn't care - it is so good!

I baked as cupcakes as originally posted and they had a beautiful domed top, which was unexpected. When baked as a cake, the cake appeared flat, so was concerned it was not going to have a beautiful dome. This recipe is perfect as is and definitely no need for any modifications in my opinion...

I baked as cupcakes as originally posted and they had a beautiful domed top, which was unexpected. When baked as a cake, the cake appeared flat, so was concerned it was not going to have a beautiful dome. This recipe is perfect as is and definitely no need for any modifications in my opinion...

Yum!

I am not a vegan, a member of my household has recently turned vegan. I was baking a ciabatta when I realised it wasn't vegan and I should find something to bake for Jo. She loves chocolate cake and I think it would be one of the things she would have missed most. I made this cake and she was delighted, she said it was the best chocolate cake she had ever tasted, vegan or otherwise, and it felt like there was a party going on in her mouth.
I have to agree with her, it is delicious. The rest of the household could hardly believe it was vegan. Made it with the glaze and that was delicious too! Will be bookmarking it for later use.

Thanks for the recipe, the cake turned out moist and flavorful (I used coffee). I made the glaze as well and it worked well with this cake. My only suggestion: the recipe tells you to mix everything in the baking pan, I tried it and I really think that it is easier to mix the batter in a bowl and then pour it into the pan. I think it's faster this way...
