Vegan Strawberry Fields Forever Cake

Trying to find a "from scratch" recipe was difficult, finding a vegan recpe was impossible! So after much research I finally dreamed (literally) up a recipe that is truly from scratch, truly vegan, truly easy and most importantly, truly delish! This Strawberry Fields Forever Cake comes out so moist that frosting is definitely optional.

1 cup pureed strawberries 
1 medium size, very mature banana

2 cups all purpose flour
1 cup sugar 
2 Tablespoons corn starch
2 ½ teaspoons baking powder
1 teaspoon salt

½ cup vegetable oil
1 ½ cups
non-dairy milk

Pre-heat oven to 350'F (177C). Purée the strawberries (the redder the better) and banana together.

In a medium mixing bowl, mix the dry ingredients together.

Add the strawberry and banana purée, vegetable oil and
non-dairy milk to the bowl containing the dry ingredients and mix well with a mixer.

4)
Pour the batter into a greased bundt pan and bake for about 40 minutes. Bake time may vary according to elevation and oven so use a toothpick to check for doneness. If it comes out clean, you're good to go! If it needs more time, add 10 minute increments of baking time, checking for doneness at the end of each one.

I would like to try your receipe out but I dont know if the unit you use it US or UK cup? :) You use 'F - so probably it is US, rigt?

Strawberry Cake

I thought the recipe sounded great and easy. It was finished after 40 minutes in a bundt pan. It was really moist and actually a great cake! The taste was a little bland for my taste. I may try to sweeten it a little next time.

muffin-like

I made this cake with raspberries, the taste was wonderful. It did take quite awhile to bake, close to an hour and the cake came out with a very muffin like taste/texture, this may have to do with baking it in a bowl instead of a cake pan though...

nice cake!

I was full of doubt while making this cake, because the recipe looked way too easy and had so few ingredients... but it turned out to be a great cake!!! it took much longer than 40 minutes to bake though
