
I've made this french toast recipe for years for vegans, omnivores and carnivores; everyone loves it. It is so simple and only takes minutes to prepare, which is why I like it. I would give credit to where the recipe came from but I honestly don't remember. I think a vegan friend told me about it many years ago.
1 16 ounce can of peaches in syrup
½ cup almond milk
1 teaspoon cinnamon
1 unsliced loaf of bread (from just about any bakery)
pinch of confectioner's sugar

Add in the peaches with their syrup, cinnamon and almond milk to a blender. Purée for a few seconds. Be sure to add the cinnamon in the middle of the ingredient additions or or it will just coat the sides of the blender.

Slice your bread nice and thick. I usually cut it about an inch thick. If you use presliced bread, you will likely have lackluster results because the middle will get soggy.

Pour the liquid mixture on a plate. Lightly coat a frying pan with oil and place it over medium-high heat. Coat both sides of the bread slice with the peach mixture and cook until golden brown. Now flip it over and cook on the other side until golden brown. It usually takes me a few minutes per side to get it to my liking. Remove from heat and sprinkle confectioner's sugar on top. Enjoy!
