Vegan French Toast

I've made this french toast recipe for years for vegans, omnivores and carnivores; everyone loves it. It is so simple and only takes minutes to prepare, which is why I like it. I would give credit to where the recipe came from but I honestly don't remember. I think a vegan friend told me about it many years ago.

1 16 ounce can of peaches in syrup
½ cup almond milk
1 teaspoon cinnamon

1 unsliced loaf of bread (from just about any bakery)

pinch of confectioner's sugar

Add in the peaches with their syrup, cinnamon and almond milk to a blender. Purée for a few seconds. Be sure to add the cinnamon in the middle of the ingredient additions or or it will just coat the sides of the blender.

Slice your bread nice and thick. I usually cut it about an inch thick. If you use presliced bread, you will likely have lackluster results because the middle will get soggy.

Pour the liquid mixture on a plate. Lightly coat a frying pan with oil and place it over medium-high heat. Coat both sides of the bread slice with the peach mixture and cook until golden brown. Now flip it over and cook on the other side until golden brown. It usually takes me a few minutes per side to get it to my liking. Remove from heat and sprinkle confectioner's sugar on top. Enjoy!

Tasty breakfast treat

So I wouldn't really call this french toast. If you make this expecting french toast, you'll be disappointed. As a breakfast treat, it's fairly tasty and I would make it again. It's extremely simple too.

The bread slices definitely need to be thick, but if you cut it too thick you mainly taste bread. My advice: do what the author says and make sure you only cut it one inch thick.

Also, the peach mixture doesn't really brown in the pan. It's still good, it just didn't get that nice golden, crunchy texture I was hoping for. It's still tasty and simple so go ahead, give it a go!

French Toast

This recipe was so easy. You really have to use a loaf of bread not the sliced kind. I like foods that are very crunchy so I placed the bread in my mini toaster oven after cooking it until golden on the frying pan. It gave it that extra crispness. I love this breakfast.
