When gliadin and glutenin proteins join together with the aid of moisture they form gluten. The more gluten in your flour, the more water required to hydrate these proteins into gluten. This is why bread flour requires more water than cake flour.

Welcome to Veganbaking.net! This site is dedicated to you: all the cruelty free bakers out there. We're providing a forum for those who want a place to compare notes, get ideas for good eats and share knowledge. We're dedicated to furthering the spread of cruelty-free baking by making it an increasingly viable option to as many people as possible and showing the world that we really know how to chow down. Cruelty-free baked goods can frequently taste just as good or better than animal based ones if done properly.
There are too many cruelty-free baked goods out there that put health before taste. While baked goods without animal products are usually healthier than their animal based counterparts (less hydrogenated oils, less saturated fats and no cholesterol), taste, consistency and convenience should be the top priorities.
Veganbaking.net is the result of several years of planning and brainstorming to find the best method of bringing recipes for tasty eats and slick baking tips to the masses. Whether you're vegan, vegetarian or just interested in reducing your reliance on animal-derived ingredients, Veganbaking.net is your cookbook! In order for it to serve it's purpose we depend on user-submitted content in the form of recipes, articles and informative, fun forum activity.
Our Views on Veganism
Veganism means different things to different people. Our views on veganism are different than other people’s and many of our baking ideas aren’t going to be accepted by strict vegans. For example, one of the most touchy ingredients in vegan baking is granulated white cane sugar. Much of the refined sugar in the United States goes through a bleaching process that uses filters utilizing bone char. Many vegans don’t approve of granulated white cane sugar because of this. We're not convinced that countless animals are being harmed by using this type of sugar and we're not convinced that we’re making a significant financial contribution to the animal industry by using it. Other sweetener alternatives are either too exotic and expensive or are way more environmentally destructive to produce than sugar. Views regarding cruelty free living differ and its up to everybody to respect each others ideas.
We're pretty sure the road to paradise is paved with vegan sweets.

Of the spices used for baking perhaps none is as intriguing as vanilla. Catching a vanilla aroma outside of a bakeshop or kitchen can start an appetite out of thin air for sweets. Vanilla is sexy and mysterious. How does something so essential to desserts come from such a humble little pod?
Vanilla's rich history being cultivated started with the Totonac people in what is now modern day Mexico. Cortez eventually found the orchid pods along with chocoalte and brought them back to Spain and gave it the name vanilla which means "little pod".

Sometimes when working with things like chocolate, custards and fondant it's important to have slow, even, consistent heating. This ensures that your ingredients don't become too hot too fast or too much, which can cause them to break down. Other times you might want to work with something like melted chocolate for an extended period of time and not worry about constantly adjusting the heat to ensure that it's evenly melted. This is where a double boiler comes to the rescue. It's like cruise control for your heat!
A double boiler is a specific piece of cookware consisting of two fitted pots. The bottom pot is filled with 1 to 3 inches of water and the top pot fits above it and holds the ingredient that you're heating.

I used to think that ice cream scoops were kind of a joke. Why not just use a spoon and run it under warm water before for the best scooping action? That's all fine and dandy if you just want to get ice cream into a bowl. There's something to be said about presentation though, especially when it comes to desserts. As humans, we're very visual when it comes to interpreting things like food and this does make a difference with how food is percieved. You might only be concerned with getting ice cream into your mouth with the least amount of effort but if you're interested in making the best possible eating experience then it's a good idea to pay attention to your visual presentation. Also if you frequently serve ice cream, convenience is key. When it comes to ice cream this is where the Zeroll Original Ice Cream Scoop comes in.
